Cumin and Butternut Stir Fry

Serves 2 – 4
Cooking time 30 minutes
Vegan

1 box Fry’s Spicy Butternut and Almond Bites
1 tbsp. jeera (cumin) seeds
½ Onion, finely chopped
12 button mushrooms, sliced
Dry mixed herbs
2 cups steamed mixed vegetables (carrots, sweet corn, green beans and baby marrows)
½ a green pepper, sliced in julienned strips
½  a red pepper, sliced in julienned strips
Salt to taste
50g Margarine
2 cups of cooked basmati rice

Heat oil in a non-stick frying pan and thereafter add in jeera seeds. Cook until the jeera seeds are golden brown or have splattered.  Add in onions, mushrooms and mixed herbs and fry until the onions are golden brown.  Add in the bites. Ensure that the bites are baked in an oven or fried in oil before adding to the mixture.

Add in the steamed mixed vegetables and salt and allow to simmer for 7-8 minutes.  Toss in the green and red peppers and add the margarine to the mixture. Allow to simmer for 2 minutes.  Stir in the basmati rice and garnish with dhania. Can be served with sweet and chilli sauce or mango pickle.
