‘Chick’n Mayo’ Sarmie

This plant-based take on the much-loved chick’n mayo sarmie is a lunchbox-friendly classic the whole family will love. Fry’s Original Pieces are finely chopped and mixed with vegan mayo, red onion, parsley and smoked paprika to create a creamy, flavourful filling. Served on golden sourdough, it’s an easy option for school lunches, workday meals or quick suppers — offering familiar comfort without the meat.

Ingredients

Fry’s Chick’n Mayo Filling

  • 2 Tbsp (30 ml) vegan butter
  • 1 box Fry’s Original Pieces (defrosted)
  • 1 small red onion, finely chopped
  • 2 Tbsp (30 ml) finely chopped parsley
  • 1 tsp (5 ml) smoked paprika
  • ½ tsp (2.5 ml) salt
  • ½ tsp (2.5 ml) pepper
  • ½ C (125 ml) vegan mayonnaise
  • 8 slices sourdough bread

To Serve (Optional)

  • Handful fresh rocket
  • Microgreens
  • Salted potato crisps

Method

Prepare Fry’s Chick’n Filling

  1. Cook Fry’s Original Pieces according to pack instructions. While still warm, chop the pieces finely.
  2. Transfer chopped pieces to a mixing bowl and add red onion, parsley, smoked paprika, salt, pepper, and mayo. Mix well and adjust seasoning to taste.

Assemble & Cook Sandwiches

  1. Butter both sides of each slice of sourdough generously.
  2. Spoon chick’n mayo filling onto four slices of bread and top with remaining slices.
  3. Toast in a sandwich press until golden, or pan-fry slowly in a non-stick pan over medium heat for 5–8 minutes, turning once, until crisp and warmed through.

To Serve

  1. For lunchboxes, allow toasted sandwiches to cool slightly before packing, or use filling cold on fresh bread slices.
  2. Serve with rocket or microgreens if using, and salted potato crisps on the side.
