Chilli & Maple Glazed Sausages and Vegan French Toast

Ingredients

Chilli & Maple Glazed Sizzlers

  • 8 Fry’s Classic Sizzlers
  • 2 Tbsp (30ml) maple syrup
  • 2 chillies, sliced

Vegan French Toast

  • ¼ cup chickpea flour
  • 3 Tbsp parsley, chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp turmeric
  • 1 Tbsp smoked paprika
  • ½ cup almond milk (or milk of your choice)
  • ¼ cup water
  • 8 slices bread of choice

Sautéed Vegetables

  • 1 punnet portobellini mushrooms, quartered
  • 1 onion, sliced
  • 100g baby tomatoes
  • 1 Tbsp lemon juice
  • 100g baby spinach
  • Salt & pepper, to taste

Method

  1. Heat a little oil in a frying pan over medium-low heat. Cook the Fry’s Classic Sizzlers for 8–10 minutes. During the last 2 minutes of cooking, add the maple syrup and sliced chillies, tossing to coat the sizzlers in the sticky glaze.
  2. To make the vegan French toast batter, combine the chickpea flour, parsley, onion powder, garlic powder, turmeric and smoked paprika in a shallow bowl.
  3. Whisk in the almond milk and water until you have a smooth, lump-free batter.
  4. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Dip each slice of bread into the batter, coating both sides evenly, then fry for 3–4 minutes per side until golden. Repeat with the remaining slices.
  5. For the vegetables, heat 2 tablespoons of oil in a separate pan over high heat. Add the mushrooms and cook undisturbed for 4 minutes.
  6. Toss the mushrooms, add the sliced onion, season with salt and pepper, and cook for a further 2–3 minutes over medium heat.
  7. Add the baby tomatoes, spinach and lemon juice, then cook for another 2 minutes until the spinach has wilted and the tomatoes have softened slightly.
  8. Serve the vegan French toast with the chilli and maple glazed Fry’s Classic Sizzlers and the sautéed vegetables.
