Creamy Chick’n and Mushroom Pie

This creamy chick’n and mushroom pie is a comforting, meat-free take on a classic family favourite. Fry’s Original Pieces, mushrooms, herbs and a gently spiced creamy sauce are baked under golden puff pastry until crisp and flaky. It’s the kind of hearty, warming meal that works beautifully for weeknight dinners, Sunday lunches or when you’re craving proper comfort food.

Ingredients

Pie Filling

  • 1 box Fry’s Original Pieces (defrosted)
  • 25 ml butter or plant-based margarine
  • 20 ml oil
  • ½ onion, finely chopped
  • 1 tsp ground ginger and garlic
  • ½ tsp ground coriander
  • 1 small tomato, skinned and grated
  • 200 ml plain yoghurt (or coconut yoghurt for a vegan option)
  • 5 ml fresh thyme
  • 200 g white button mushrooms, sliced
  • 1½ tsp salt
  • Ground black pepper, to taste
  • 1 Tbsp flour mixed with 100 ml cold water

Pie Crust

  • 1 roll puff pastry

Method

Prepare Filling

  1. Cook Fry’s Original Pieces according to pack instructions and set aside.
  2. Heat oil and butter/margarine in a pan over medium heat. Add chopped onion and sauté until softened.
  3. Add ground ginger & garlic, ground coriander, and grated tomato. Cook for 1 minute until fragrant.
  4. Stir in cooked Fry’s Pieces and fresh thyme. Pour in yoghurt, mix well, and simmer gently for 1 minute.
  5. Add sliced mushrooms, cover, and simmer until mushrooms are tender.
  6. Season with salt and black pepper. Stir in flour and water mixture and cook until sauce thickens.

Assemble & Bake Pie

  1. Allow filling to cool completely. Transfer to a 20 cm round pie dish.
  2. Cover with rolled-out puff pastry, trim edges, and brush with dairy or plant-based milk.
  3. Bake in a preheated oven at 190°C for 20 minutes, or until pastry is golden and crisp.
