Fresh & Tasty Plant-Based Veggie Stir Fry

Packed with colourful veggies and Fry’s Original Pieces, this plant-based stir fry is quick, easy and perfect for busy weeknights when you want a healthy and tasty dinner. Our Pieces are high in protein, gluten-free, low in carbs, a great source of fibre and a wonderful meat-free switch for chicken — making them perfect for better-for-you meals.

Ingredients

Stir Fry

  • 1 box Fry’s Original Pieces, defrosted
  • Oil, for frying the Pieces
  • Oil, for frying the vegetables
  • 2 cups frozen vegetables (sweet corn, carrots, baby marrows, peas)
  • 1 punnet mushrooms
  • 1 large onion, julienned
  • 1 tsp rosemary
  • ½ tsp dry mixed herbs
  • ½ tsp jeera (cumin) seeds
  • 1 green pepper, julienned
  • 1 red pepper, julienned
  • 3 Tbsp sweet chilli sauce
  • 4 green chillies, finely chopped (optional)
  • 4 stems shallot (spring onion), finely chopped
  • 4 cups cooked pasta (al dente) or rice noodles
  • Salt to taste
  • Fresh coriander, to garnish

Method

Fry

  1. Heat oil in a frying pan (heavy-based or non-stick works best). Add Fry’s Pieces and cook until golden brown. Set aside.
  2. Add more oil to the hot pan. Add frozen vegetables, mushrooms, onion, rosemary, mixed herbs and jeera. Lightly fry.
  3. Add the green and red peppers and season with salt. Fry until the vegetables are cooked but still crunchy.

Build

  1. Add the cooked Fry’s Pieces back into the pan along with the sweet chilli sauce, spring onion and green chillies (optional). Mix well.
  2. Remove from the heat and fold in the cooked pasta/noodles while the mixture is warm.

Serve

  1. Garnish with fresh coriander and serve hot.
