Plant-Based Chick’n Burrito

Loaded with veggies, beans, rice and Fry’s Spiced Pieces, this protein packed plant-based Chick’n Burrito is a hearty, tasty dinner option that’s convenient, delicious and healthier. Wrapped in a warm tortilla and finished with a crispy “cheese” crust, these wraps are bold, yummy and satisfying.

Ingredients

Burrito Filling

  • Oil for frying
  • 1 box Fry’s Spiced Pieces (defrosted)
  • 1 large onion, sliced
  • 3 small bell peppers (red, yellow, green), sliced
  • 2–3 Tbsp taco spice mix
  • 1 tin kidney or black beans, drained
  • 1 C cooked rice
  • ½ C whole kernel corn
  • Salt and pepper

Burritos

  • 4 large flour tortillas, warmed
  • Burrito filling
  • 10 baby tomatoes, halved
  • 1 large avocado, smashed & seasoned
  • Fresh coriander, washed and picked
  • Salt and pepper

“Cheese” Crust

  • 250 g vegan cheddar cheese, grated (divided into 4 portions)
  • Large non-stick frying pan

To Serve (Optional)

  • Extra fresh coriander
  • Extra guacamole

Method

Burrito Filling

  1. Set a large frying pan over medium-high heat. Heat some oil, add the Fry’s Spiced Pieces and fry 3–4 minutes per side until golden. Remove and set aside.
  2. Add more oil to the pan, then add onion and peppers. Sauté until softened and slightly coloured.
  3. Add taco seasoning and fry for 1 minute.
  4. Add beans, rice and corn. Fry 2 minutes, then return the Pieces and toss well. Season to taste and remove from heat.

Burritos

  1. Warm tortillas. Spread filling in a line just off-centre. Add tomatoes, avo, Fry’s Pieces and coriander. Season.
  2. Fold the burrito: fold up bottom, tuck tightly, fold sides in, and roll. Repeat for all four.

Cheese Crust

  1. Heat a non-stick pan on medium-high. Add a pile of grated cheese shaped like a rectangle.
  2. Once bubbling and crisping, place the burrito seam-side up on the cheese. Let sit 10 seconds.
  3. Remove pan from heat, lift the melting cheese up around the burrito using a spatula. Flip onto a plate. Repeat.

To Serve

  1. Slice burritos diagonally and serve with guacamole and coriander.
