Add a dollop of vegan cream cheese to the surface of the wraps and use the back of a spoon to spread it around evenly; keep it central and don’t go right to the edge as you will be trimming this off.
Add a layer of carrot ribbons lengthways from left to right across the cream cheese, overlapping slightly. Add a layer of cucumber ribbons in the same way on top.
Add a few spoonfuls of smashed avocado in a log shape going across the veggies on the side closest to you (you are going to tuck and roll this so that the avo is in the centre, like you would when rolling sushi). Press sliced baby tomatoes along the length of the avocado, add a squeeze of lemon juice and season.
Pick up the side of the wrap closest to you, fold it over the avocado and roll it away from you to create a tight cylindrical ‘sushi-style’ roll. Trim off the edges and then slice the rolled wraps into equal pieces, either 4 or 6, depending on how thick you want them.
Mix the mayonnaise and tomato sauce together to combine.
