9 oz firm tofu, blotted dry then mashed with a fork
½ teaspoon ground turmeric
½ teaspoon garlic powder
Salt and pepper
Avo Cashew Cream
Add the mashed avocado to the cashew cream, to add the Mexican flavor!
Stir and further mash the avocado through the cream, to create one creamy substance of the cashew cream and avocado combined.
Season to taste with salt and pepper, cover and chill until needed.
Links, Wraps and Toppings
Heat a skillet over medium heat for 2-3 minutes, then add oil and cook the Fry’s Breakfast Links for 8-10 minutes as you turn them on occasion.
Set aside and keep warm.
Using the same skillet, turn the heat up to medium-high and add the olive oil. Add the mashed tofu, turmeric and garlic and cook for 4-5 minutes until most of the water has cooked out. Season to taste with salt and pepper.
<p style="font-family:trade-gothic-next-condensed;color: #154732">Tip: At this point you can return the links back to the pan to reheat while waiting to assemble the wraps.</p>
<p style="font-family:trade-gothic-next-condensed;color: #154732">To assemble, lay the wraps out and spoon a layer of avo-cashew cream in the center of each wrap. Divide the scrambled tofu between the wraps then start building. Add some Fry’s Breakfast Links, followed by black beans and salsa. Season with salt and pepper. Tuck, fold and nosh! </p>
