Chilli & Honey Glazed Sausages and Vegan French Toast

Turn up the heat on your next plant-based brunch. Our Classic Sizzlers are coated in a glossy chilli-and-honey glaze, and served alongside golden vegan French toast made with a chickpea-based batter. Add smoky mushrooms, wilted spinach and burst-open baby tomatoes and you’ve got a brunch platter that feels indulgent but is completely plant-based.

Ingredients

Classic Sizzlers & Glaze

  • 8 x Fry’s Classic Sizzlers
  • 1 Tbsp (15 ml) honey
  • 2 chillis, sliced

Vegan French Toast

  • ¼ cup chickpea flour
  • 3 Tbsp parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp turmeric
  • 1 Tbsp smoked paprika
  • ½ cup almond milk (or milk of choice)
  • ¼ cup water
  • 8 slices bread of choice

Mushrooms & Veggies

  • 1 punnet portobellini mushrooms, quartered
  • 1 onion, sliced
  • 100 g baby tomatoes
  • 1 Tbsp lemon juice
  • 100 g baby spinach
  • Oil for frying

Method

Classic Sizzlers

  1. Heat oil over medium-low heat. Fry the Sizzlers for 8–10 minutes. In the last 2 minutes of cooking, add honey and chilli, tossing to coat the Sizzlers in the glaze.

Vegan French Toast

  1. In a bowl, combine chickpea flour, parsley, onion powder, garlic powder, turmeric and smoked paprika. Whisk in almond milk until lump-free batter forms.
  2. Heat 1 Tbsp oil in a non-stick pan over medium heat. Dunk a slice of bread in the batter on both sides and fry for 3–4 minutes per side. Repeat with remaining bread.

Mushrooms & Veggies

  1. Heat 2 Tbsp oil in a pan over high heat. Add mushrooms and cook undisturbed for 4 minutes. Toss, add onion, season with salt and pepper, and cook for 2–3 minutes on medium heat.
  2. Add tomatoes, spinach, and lemon juice. Cook for 2 more minutes until spinach has wilted.

To Serve

  1. Serve French toast with the chilli & honey glazed Sizzlers and sautéed mushrooms.
