Ingredients

Chunky Strips Filling

  • 1 bag Fry’s Chunky Strips
  • 4 Tbsp oil
  • 2 Tbsp margarine
  • 1 tsp ginger and garlic paste
  • 1 Tbsp Kashmiri masala
  • 1 tsp turmeric powder
  • 3 tomatoes, chopped (or canned tomatoes)
  • 2 large onions, sliced
  • 3 Tbsp sweet chilli sauce (or preferred sauce)
  • ±200g mixed peppers
  • ¼ tsp Chinese five spice
  • Salt, to taste

Tandoori Roti

  • 2 cups cake flour
  • ½ packet instant yeast
  • 1 Tbsp sugar
  • ½ cup plant-based milk
  • ¼ cup water
  • 1 Tbsp margarine
  • 1½ Tbsp oil
  • Salt, to taste

Serving Suggestions

  • Sauce or vegan mayonnaise of your choice
  • Potato wedges
  • Fresh salad

Method

  1. Heat the oil and margarine in a large frying pan over medium heat. Add the sliced onions and sauté until softened.
  2. Add the ginger and garlic paste and cook for about 1 minute until fragrant.
  3. Stir in the Kashmiri masala, turmeric, chopped tomatoes, mixed peppers, sweet chilli sauce and Chinese five spice.
  4. Add the Fry’s Chunky Strips, season with salt to taste and mix well. Cook for about 10 minutes until the sauce has thickened and the flavours are well combined.
  5. To make the roti, combine the cake flour, sugar and salt in a large bowl.
  6. Mix the instant yeast into the warm plant-based milk to activate it.
  7. Add the yeast mixture, water, margarine and oil to the dry ingredients. Mix until a soft dough forms, then knead lightly until smooth.
  8. Divide the dough into equal portions, roll each one out, then cook in a hot dry pan until lightly golden on both sides. Keep the cooked roti covered with a clean kitchen towel to retain their softness.
  9. To serve, place a tandoori roti on a plate, spoon over the Chunky Strips filling, add your favourite sauce or vegan mayonnaise, then fold the roti over.
  10. Serve with potato wedges and a fresh salad.
