Crisp Split Pea Carrot Salad with Cucumber & Mint Yoghurt Dip

This Crisp Carrot Salad with Cucumber & Mint Yoghurt Dip recipe is a masterclass in easy, fresh plant-based eating. Julienned carrots are tossed in a zingy sesame, miso and lime dressing, then paired with a cucumber and mint yoghurt dip and topped with Fry's Spicy Split Pea Bites. Ingredients

Carrot Salad

  • 12 Fry’s Spicy Split Pea Bites
  • 700g carrots, julienned
  • 4 spring onions, sliced
  • 1 Tbsp sesame seeds, toasted
  • 2 Tbsp peanuts (optional)
  • 1 chilli, sliced (optional)

Sesame-Miso Dressing

  • 2cm piece fresh ginger, minced
  • 1 garlic clove, minced
  • 1 lime, zested and juiced
  • 1 tsp vegan “fish” sauce
  • 1 Tbsp miso paste
  • ⅓ cup sesame oil

Cucumber & Mint Yoghurt Dip

  • ½ cup yoghurt (or vegan yoghurt)
  • ½ cucumber, grated
  • 5g fresh mint, finely chopped
  • Salt, to taste

To Serve

  • 5g fresh coriander and basil
  • 4 wraps

Method

  1. Preheat the air fryer to 180°C. Cook the Fry’s Spicy Split Pea Bites according to the packaging instructions until golden and crispy.
  2. In a large bowl, combine the julienned carrots, sliced spring onions, toasted sesame seeds, peanuts and chilli, if using.
  3. In a separate heatproof bowl, combine the minced ginger, garlic, lime zest and juice, vegan “fish” sauce and miso paste.
  4. Heat the sesame oil in a small saucepan until hot, then carefully pour it over the ginger and garlic mixture. Stir well, then pour the dressing over the carrot mixture and toss until evenly coated.
  5. For the yoghurt dip, squeeze any excess liquid from the grated cucumber. Mix the cucumber with the yoghurt and chopped mint, season with salt and stir to combine.
  6. Spread a generous spoonful of the cucumber and mint yoghurt dip onto each wrap.
  7. Top with the sesame-miso carrot salad, then add three Fry’s Spicy Split Pea Bites to each wrap.
  8. Finish with fresh coriander and basil before serving.

Serving suggestion: Enjoy as a fresh lunch or light dinner, with extra lime wedges on the side if desired.
