Falafel Pita with Tahini & Turmeric Dressing

This falafel pita with a delicious tahini & turmeric dressing is a quick, and nutritious meal. Air-fried in just 8 minutes, the falafels are loaded into warm pitas with a colourful slaw of pickled red onion, cucumber, cherry tomatoes, radishes and shaved cabbage, all dressed in a tangy tahini and turmeric vinaigrette. It’s the kind of veg forward recipe that feels fresh and restaurant-worthy but comes together in under 20 minutes.

Ingredients

Falafel Pitas

  • 12 Fry’s Falafels
  • 1 red onion, diced
  • 1 lemon, juiced
  • 1 cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • 3 radishes, thinly sliced
  • ½ cabbage, finely shaved
  • 10g fresh mint, roughly chopped
  • 10g fresh parsley, roughly chopped
  • 180g hummus
  • 4 pita breads or wraps

Tahini & Turmeric Dressing

  • 2 Tbsp olive oil
  • 1 Tbsp tahini
  • 1 tsp turmeric
  • 1 orange, zested and juiced
  • 1 Tbsp lemon juice

Method

  1. Preheat the air fryer to 180°C.
  2. Cook the Fry’s Falafels in the air fryer for 8 minutes, or until golden and heated through.
  3. Place the diced red onion into a medium bowl and pour over the lemon juice. Leave to stand for a few minutes to lightly pickle and sweeten the onion.
  4. Add the cucumber, cherry tomatoes, radishes and shaved cabbage to the onions and toss together.
  5. To make the dressing, whisk together the olive oil, tahini, turmeric, orange zest and juice, and lemon juice until smooth and emulsified.
  6. Pour the dressing over the slaw, toss well to coat and allow it to stand for 10 minutes.
  7. Warm the pita breads or wraps in the air fryer for 1–2 minutes.
  8. Stir the chopped mint and parsley through the slaw.
  9. To serve, cut a slit into each pita to create a pocket, spread with hummus, fill with the dressed slaw and top with three Fry’s Falafels. Serve immediately.
