Cooking Time: 45 minutes

Ingredients

  • 1 box Fry’s Frikadelle
  • 2 Tbsp oil, divided
  • 2–3 medium white onions, chopped
  • 3 green chillies, chopped
  • 1 handful fresh coriander, divided
  • 1 handful fresh mint, divided
  • 1 tsp ginger and garlic paste
  • 2–3 curry leaves
  • 2 Tbsp masala of choice
  • 1 tsp dhania and jeera powder
  • 1 tsp turmeric powder
  • 8 button mushrooms, sliced
  • 8 ripe tomatoes, grated
  • 1–2 tsp salt
  • 2 Tbsp sugar

Method

  1. Cook the Fry’s Frikadelle according to the package instructions until evenly cooked and crispy on the outside. Alternatively, cook them in an air fryer for 8–10 minutes. Set aside.
  2. Heat the remaining tablespoon of oil in a large pot over medium heat.
  3. Add the chopped onions, green chillies, about 1 tablespoon each of the chopped mint and coriander, and the ginger and garlic paste. Fry until the onions are golden brown.
  4. Add the curry leaves and cook for 1 minute until fragrant.
  5. Stir in the masala, turmeric, and dhania and jeera powder. Cook gently for about 3 minutes, stirring continuously to prevent the spices from burning.
  6. Add the sliced mushrooms and cook for 5–6 minutes. Add a splash of water if needed to prevent sticking.
  7. Stir in the grated tomatoes and cook for about 10 minutes until they begin to break down.
  8. Add the sugar and salt, then reduce the heat to medium-low and simmer for 25–30 minutes until the chutney is rich and thick.
  9. About 5 minutes before the chutney has finished cooking, gently add the cooked Fry’s Frikadelle and allow them to simmer in the sauce.
  10. Garnish with the remaining fresh mint and coriander, then serve hot with roti or rice.
