Jalapeño Lime plant-based ‘chicken’ Tacos

Ingredients

Tacos

  • 1 box Fry’s Southern Fried Strips
  • 4 flour or corn taco shells
  • Baby gem lettuce, shredded
  • 2 spring onions, sliced
  • 1 small pineapple, cut into wedges
  • ½ cup chopped mango or papaya
  • Olive oil

Mayo Drizzle

  • ½ cup mayo
  • Zest & juice of 1 lemon or lime
  • Salt & pepper

Jalapeño Lime Vinaigrette (Optional)

  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • Zest & juice of 1 lime
  • 1 garlic clove, minced
  • 1 tsp chopped pickled jalapeño

Method

Caramelised Fruit

  1. Fry pineapple wedges in a splash of olive oil for 2–3 minutes per side until golden. Let cool, then chop.

Mayo & Vinaigrette

  1. Whisk together all mayo drizzle ingredients.
  2. If using, whisk together vinaigrette ingredients for extra heat.

Taco Components

  1. Air fry the Fry’s Southern Fried Strips according to pack instructions.
  2. Warm taco shells in a dry pan.

To Assemble

  1. Spread mayo onto each taco shell.
  2. Add shredded lettuce.
  3. Slice cooked strips into thinner pieces and add to tacos.
  4. Top with pineapple, mango or papaya, and spring onions.
  5. Finish with more mayo drizzle and vinaigrette (if using).
