Meat-Free Mince Quesadillas

These Meat-Free Mince Quesadillas are a quick and easy plant-based dinner that the whole family will love. Made with Fry’s Pea Protein Mince and plenty of colourful veggies, the savoury filling is gently spiced and packed into toasted tortillas for an easy, hands-on meal. Perfect for busy evenings, these quesadillas come together fast and are ideal for sharing, customising and serving with your favourite salads.

Ingredients

Mince Filling

  • 1 box Fry’s Pea Protein Mince
  • 2 Tbsp oil
  • 1 medium to large red onion, diced
  • 1 large red pepper, diced
  • 1 large green pepper, diced
  • 1 jalapeño, finely chopped
  • 1 small punnet button mushrooms, sliced
  • 1 cup vegetable stock
  • 1 tsp dried oregano
  • 1 tsp garlic paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 3 cups fresh spinach, chopped
  • Sea salt and cracked black pepper, to taste
  • Handful of fresh coriander, chopped

To Assemble

  • 6–8 brown tortillas

Method

Mince Filling

  1. Wash peppers, remove seeds, and dice.
  2. Heat a large deep non-stick pan over medium heat and add oil, onion, peppers, and Fry’s Pea Protein Mince. Sauté gently until vegetables soften and mince is heated through.
  3. Add garlic paste and chopped jalapeño, season lightly with salt, and cook for about 5 minutes, taking care not to brown the mince too much.
  4. Pour in vegetable stock, reduce heat slightly, and cook until softened.
  5. Add oregano, cumin, and coriander. Stir through mushrooms and cook for a further 5 minutes.
  6. Add spinach and cook until just wilted. Season with salt and pepper, stir through fresh coriander, and remove from heat.

Assemble Quesadillas

  1. Heat a large non-stick frying pan over medium heat and warm tortillas, flipping once, until lightly toasted.
  2. Assemble quesadillas in the pan by spooning mince mixture onto one tortilla, keeping filling away from edges.
  3. If desired, add avocado or a squeeze of lime juice, then top with a second tortilla.
  4. Cook for 2–3 minutes per side until golden and crisp.
  5. Remove from pan, cut into triangles, and serve hot with salsa or guacamole.
