INGREDIENTS
Sourdough Croutons
 4 slices of stale sourdough, roughly torn into small pieces
 Olive oil
 Dried Italian herb blend
 Salt and pepper
Vegan Caesar Dressing
 ¾ C (180 ml) vegan mayonnaise
 2 Tbsp (30 ml) roughly chopped baby capers
 1 Tbsp (15 ml) caper brine
 2-3 cloves of garlic, finely chopped/microplaned
 2 Tbsp (30 ml) nutritional yeast
 1 Tbsp (15 ml) Dijon mustard
 1 Tbsp (15 ml) soy sauce
 Zest and juice of 1 lemon
 Salt and pepper
Schnitzels & Salad
 1 x 320 g box Fry’s Family Golden Crumbed Schnitzels
 2 heads of Cos lettuce, washed and sliced
 1 large avocado, sliced or cut into chunks
 Vegan Parmesan cheese, shaved with a vegetable peeler

Method

Sourdough Croutons

Preheat the oven to 180 ºC.

Lay the croutons out on a baking tray and drizzle with a good amount of olive oil. Sprinkle with dried herbs and season with salt and pepper. Bake for 10 minutes and then give them a stir on the tray. Continue baking until they are golden brown. Remove from the oven and allow to cool. Tip: You can cook the Fry’s Family Golden Crumbed Schnitzels in the heated oven just after cooking the croutons, or you can pop them into the toaster to cook for 8 minutes until warmed through.

Vegan Caesar Dressing

Add all of the ingredients for the dressing to a bowl and whisk well to combine. Season to taste.

Schnitzels & Salad

Add the chopped lettuce to a large mixing bowl. Drizzle with a portion of the dressing and toss the leaves well to dress the salad (you can add extra salad dressing as desired). Portion the dressed leaves into 4 serving bowls. Add croutons and avocado chunks/slices to each bowl. Arrange the sliced Fry’s Family Golden Crumbed Schnitzels on top of the leaves. Add shavings of vegan Parmesan cheese and serve.

Tip: some may prefer to dress their own salad, in that case, leave out the step of dressing the leaves and go straight to portioning the lettuce and other ingredients. Serve the salad with Caesar dressing on the side.
