Minestrone Soup with Sausages 2019

 3 Fry's Braai-Style Sausages
 1 tbsp oil
 2 onions, chopped
 1 tbsp smoked paprika
 3 baby potatoes, peeled and cubed
 3 carrots, sliced
 3 stalks celery, diced
 1 tin tomato paste
 1 tin of your favourite beans, (cannellini beans are a good option)
 1 tin of chopped tomato
 4 cups vegetable stock
 4 cups water
 A handful of fresh basil, chopped
 ½ cup macaroni, uncooked

Heat oil in a large pot over medium heat and sauté the onions and paprika. Stir potatoes, carrots, celery, onion and tomato paste and cook for 5 minutes. Add beans, tomatoes, stock and water. Cook and stir 30 minutes, or until vegetables are tender. Add the water.


Add the herbs and macaroni and cook for a further 15 minutes or until the pasta is tender. Cut the Braai-Style Sausage into rounds. Heat a pan with some oil and fry the Sausages for 1 minute per side. Serve on top of the soup.
