Spicy Sausage Chutney

This Top Chow Spicy Sausage Chutney is a bold, fragrant crowd-pleaser from Top Chow 2024 winners Fee & Kavish Sahadeo. Fry's Spicy Sausages are simmered in a rich tomato sauce built on a base of whole spices — cumin seeds, cardamom, cloves, cinnamon and star anise — then finished with Kashmiri chilli powder and fresh coriander. The result is a thick, deeply flavoured chutney that's perfect with turmeric and pea rice, chapatti, atchar and crunchy poppadoms.

Ingredients

  • 1 bag Fry’s Spicy Sausages
  • 1 large onion, finely chopped
  • 4 large tomatoes, chopped
  • 2 chillies, finely chopped
  • 1 garlic clove, minced
  • 50g tomato paste
  • 2 Tbsp cooking oil
  • 1 tsp sugar
  • 1 tsp cumin seeds
  • 4 cardamom pods
  • 6 cloves
  • 2 cinnamon sticks
  • 1 star anise
  • 1 Tbsp mixed masala
  • ½ tsp turmeric powder
  • 1 tsp Kashmiri chilli powder
  • Salt, to taste
  • Fresh coriander (dhania), for garnish

Method

  1. Heat the oil in a large frying pan over medium heat.
  2. Add the cumin seeds, cardamom pods, cloves, cinnamon sticks and star anise. Fry briefly until fragrant.
  3. Add the chopped onion and cook until golden brown.
  4. Stir in the minced garlic, chopped chillies, tomatoes, salt, mixed masala, turmeric and Kashmiri chilli powder.
  5. Cook until the tomatoes have softened and the sauce has thickened.
  6. Add the chopped Fry’s Spicy Sausages together with the tomato paste and stir well to combine.
  7. Stir in the sugar to balance the acidity and simmer for 10–15 minutes until the chutney is rich and thick.
  8. Garnish with fresh coriander and serve hot.

Serving suggestion: Serve with turmeric and pea rice or chapatti, accompanied by atchar and crunchy poppadoms.
