Meat-Free Mexicana Tacos

Ingredients

Mince Filling

  • 1 box Fry’s Pea Protein Mince
  • 2 Tbsp oil
  • 1 onion, finely chopped
  • 1 tsp ground cumin
  • ½ tsp dried origanum
  • 1 tsp paprika
  • 1 fresh chilli, finely chopped
  • 1 tsp dried coriander
  • 1 cup vegetable stock
  • 2 Tbsp tomato paste
  • 1 tin crushed tomatoes
  • 1 tin red kidney beans (optional)
  • Salt & pepper, to taste

To Serve

  • 1 box taco shells
  • Fresh coriander
  • Tomato salsa
  • Guacamole
  • Cheese (optional – substitute vegan cheese if preferred)

Method

  1. Heat the oil in a pot over medium heat and add the onion. Cook until softened and translucent.
  2. Add the cumin, origanum, paprika, dried coriander and chopped chilli, stirring gently to release the spices’ aroma.
  3. Stir in the tomato paste and Fry’s Pea Protein Mince and cook for 2–3 minutes, taking care not to burn the spices.
  4. Pour in the vegetable stock and simmer for 5 minutes, allowing the mince to absorb the flavours.
  5. Add the crushed tomatoes and kidney beans, if using, and simmer for a few more minutes until rich and saucy.
  6. Season with salt and pepper to taste.
  7. Cook the taco shells according to the packet instructions, then fill with the Mexicana mince.
  8. Top with guacamole, salsa, fresh coriander and vegan cheese, if desired.
