Ingredients

  • 1 box Fry’s Frikadelle
  • 2 Tbsp cornflour
  • 1 onion, finely chopped
  • 4 Tbsp oil
  • 2 Tbsp plant butter or margarine
  • 2 cinnamon sticks
  • 2 green chillies
  • 3–4 garlic cloves, crushed
  • ¼ tsp ground coriander
  • ¼ tsp ground cumin
  • ¼ tsp garam masala
  • 1 Tbsp Kashmiri mixed masala
  • 6–8 ripe tomatoes, liquidised
  • 1 sachet tomato paste
  • 1 cup coconut cream
  • 8–10 roasted almonds, roughly chopped
  • 1 handful fresh coriander, finely chopped
  • Salt, to taste

Method

  1. Heat the oil and plant butter in a large pot over medium heat.
  2. Optional: Defrost the Fry’s Frikadelle slightly, then gently shape each one into a prawn shape.
  3. Lightly coat the Frikadelle in the cornflour, then fry until golden brown. This helps them retain their shape in the sauce. Remove from the pot and drain on paper towel.
  4. Using the same pot and oil, sauté the onion, green chillies, cinnamon sticks and garlic for a few minutes until fragrant.
  5. Add the ground coriander, ground cumin, garam masala and Kashmiri mixed masala. Stir continuously for about 1 minute, taking care not to burn the spices.
  6. Pour in the liquidised tomatoes, stir in the tomato paste and season with salt to taste.
  7. Cook over medium heat for approximately 15 minutes, or until the tomatoes have cooked down and the sauce has become rich and slightly sweet.
  8. Stir in the coconut cream, then add the chopped roasted almonds and mix well.
  9. Carefully return the fried Frikadelle to the sauce and simmer gently for a few minutes until heated through.
  10. Garnish with the fresh coriander and serve hot with basmati rice, garlic naan or roti.
