Ingredients

Mexicana Mince Filling

  • 1 box Fry’s Pea Protein Mince
  • 2 Tbsp oil
  • 1 onion, finely chopped
  • 1 tsp ground cumin
  • ½ tsp dried origanum
  • 1 tsp paprika
  • 1 fresh chilli, finely chopped
  • 1 tsp dried coriander
  • 1 cup vegetable stock
  • 2 Tbsp tomato paste
  • 1 tin crushed tomatoes
  • 1 tin red kidney beans (optional)
  • Salt and pepper, to taste

To Serve

  • 1 box taco shells
  • Fresh coriander
  • Tomato salsa
  • Guacamole
  • Vegan cheese

Method

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened and translucent.
  2. Add the cumin, origanum, paprika, dried coriander and chopped chilli. Stir gently for a minute to release the aromas of the spices.
  3. Add the tomato paste and Fry’s Pea Protein Mince. Cook for 2–3 minutes, stirring regularly and taking care not to burn the spices.
  4. Pour in the vegetable stock and simmer for 5 minutes, allowing the mince to absorb the flavours.
  5. Add the crushed tomatoes and kidney beans, if using. Simmer for a further few minutes until the mixture is rich and saucy.
  6. Taste and season with salt and pepper as needed.
  7. Prepare the taco shells according to the package instructions.
  8. Fill the taco shells with the Mexicana mince and top with guacamole, tomato salsa, fresh coriander and vegan cheese, if desired.
