Rainbow Lunchbox Wraps

Ingredients

Rainbow Lunchbox Wraps

  • 1 box Fry’s Southern Fried Strips
  • Rice paper wraps
  • ½ bag rainbow slaw
  • Small bag lettuce
  • 1 avocado, sliced
  • 100g vegan feta or another vegan cheese
  • ⅓ cup vegan mayonnaise

Dipping Sauce

  • 3 Tbsp soy sauce
  • Vegan mayonnaise

Method

  1. Cook the Fry’s Southern Fried Strips in the air fryer for about 9 minutes, or until golden and heated through.
  2. While the strips are cooking, prepare the remaining ingredients and arrange them in separate bowls for easy assembly.
  3. Fill a large shallow bowl with warm water. Soak one rice paper wrap in the water for about 30 seconds, or until just softened.
  4. Place the softened rice paper wrap onto a clean work surface. Spread a spoonful of vegan mayonnaise across the centre of the wrap.
  5. Layer the rainbow slaw, lettuce, vegan feta, avocado and two to three Fry’s Southern Fried Strips over the mayonnaise.
  6. To wrap, fold the edge closest to you over the filling and roll gently. Halfway through rolling, fold in the left and right sides, then continue rolling tightly to seal.
  7. Slice the wrap in half and repeat with the remaining ingredients.
  8. For the dipping sauce, stir together the soy sauce and vegan mayonnaise. Transfer to a small container with a lid.
  9. Serve the wraps with the dipping sauce on the side, or pack separately for lunchboxes.
